I'd say Demogorgon was the toughest for me personally. Most frustrating fights for me was in IWD 2 , with the drums and teleporting goblins.
2 other fights that I remember was really tough for me.
Fighting Drizzt and his gang in BG 2 when you leave the UD if you had a evil party (which I mostly play).
Plus the fight in the Bridge District in BG 2 , where you need a rogue stone to enter.Cant remember all the foes you fight , but I think it was a beholder , vampire , and other nasties.
I never finished BG2 (needed to update my computer system and updated myself out of the game, dammit!) but I think the Shadow Dragon and Firkraag were the worst, followed by the MindFlayers and Beholders in the Underdark. That... was not fun. Not fun in the slightest.
Final boss of ToB with Ascension installed. I put the mods in the wrong order, so Amelyssan was bugged and immune to +5 weapons. So, basically, it's clearly the hardest fight because it was literally impossible to win.
Sleeping by the coast in BG 1 and having 2 of my chars being dire charmed right off the bat makes for some interesting odds. Kill them or knock them out all while being pelted by nasty arrows.
The group of female assassins that you "usually" encounter right after you escape the Nashkell mines. At this point I'm already pretty battered and they just slaughter me.
For me, in BGI it was appropriately the final battle. Likewise in BGII, the fight with Irenicus had an epic feel. I had less trouble with the final battle in ToB, the big fight for me in that expansion was Sendai. For the IWD games it was without doubt the dragon in Heart of Winter, Icasaracht.
Overall the hardest battle was Irenicus!
FWIW, Firkraag is probably the coolest..... but so many cool fights to choose from. He just made me SO mad. IWD2 had the cool fight with Iyachtu Xvim, that one was a bit of a surprise.
A reality for me, is the four of them have more cool battles than all of the other games I have ever played combined! Some bone chilling creepy stuff, not stupid gory junk, creepy. Things that can only be achieved with a (cough..cough) strong storyline!

I'm one of those players that reloads every time a party member dies. For some reason I can't bring myself to continue the game with dead party members even though I'm fully aware I can raise them.
The final fight of Trials of the Luremaster was the only encounter I decided to broke that rule. Just the thought of having to replay that fight was argument enough for me...:D
That Yuan-ti lady from Icewind Dale, had a tough time getting through those immunities! Also the second lvl of The Vale of Shadows, if you just try and oneshot it, you are going to be overwhelmed!
BG1, it's tough to say. I'm tempted to go with "Any early battle involving Kobold Commandos." Or anyone unfortunate enough to be wandering to the east of the Temple in chapter 1...
But probably the one that caused me the most difficulty was the final battle. I remember, the first time I beat the game, I was severely underlevelled and had won most fights by having Montaron run in, fling some arrows of detonation, then run out. Those were the days...
I've played BG2 enough that it's hard for me to remember what were the difficult battles. Everything that comes to mind is due to mods. Once you know how the game works, most fights are pretty easy. Most of the difficult ones that are mentioned can be soloed by Korgan (watching him effortlessly wreck Kangaxx is always good for a laugh). Maybe the Twisted Rune?
Of course, the most difficult is Ascension Final TOB. That is some nasty stuff. Still haven't beaten it, to be honest. Gobsmacked the Demogorgon and rushed in to face the end, quite confident in myself. Ended up being a bit of a hassle.
The only thing that comes to mind is those bloated corpses on the island in IWD Heart of Winter using the Heart if Fury mode. Basically anything under HOF will be overkill against you.
One of the hardest battles in BG1 for me was the fight at the top of the Iron Throne tower. I believe it was Zhalimar Cloudwulf and company. BG2 has a LOT of difficult fights. I always hated the demon and devil filled rooms in Watcher's Keep (though I think they were optional since you could bargain with them). Also, the room right before Demogorgon has a really tough fight when you click the vault lock.
For me the hardest at the level I had first hit it was the demon in the basement of the house in Ulgoth's Beard. At the time I was not aware that cloudkill would be all that useful there so that was a pretty ugly battle.
BG1 - The Demon in Ulgoth's Beard. BG2 - Its hard to choose a battle in BG2 since I've played it so many times I know what areas to go to and what level. The "rival" party in Waukeen's Promenade always tore me to shreds at the beginning of the game IWD1 - I never bet the final boss or finished Heart of Winter. Such an unforgiving game! IWD2 - 4 golem/statues beneath the monastery, never finished the game but it wasn't nearly as a hard as the first game.
BG2 Improved Anvil v6 - every battle One of the hardest mod's I've ever played, borderline insane.
However a few notable battles include Irenicus Dungeon which I never once made it through, and the planarsphere. Anyone who completed the mod, well done

I definitely wouldn't recommend it to anyone who finds anything in bg1/2 challenging. This encounter is just sick.
Usually with a side of praying my archer was free, cause Kivan = Beast
Anyways, the priest level five spell "Chaotic Commands" makes you immune to their blast.
