Just remember: in AD&D (1e and 2e), you could dual class multiple times. This is often overlooked by people who's AD&D experience is dominated by Baldurs gate.
However, I think he was suffering from level-philia, that tendency to make the hero (and villain) of the story the highest possible level even if that doesn't really makes much sense or makes the character more or less immortal and god-like*.
PS: I have only read a few of Robert E. Howard stories, and though very powerful, Conan seemed human to me. I don't know if later novels or stories make him more like a god of war.
*You know, like making Darth Vader a 20th level something, Han Solo a 15th level rogue, and Jesus a 30th level ninja.
Now, how would you adapt Conan to 5e D&D? This challenge is for book Conan mainly. If you make movie Conan please specify if its Arnie or Momoa. The comics by Marvel and Dark Horse have too much stuff to cover in order to make precise stats.

I would make him a Barbarian(Berserker) 10/Fighter(Champion) 6/ Rogue(thief) 4. Outlander background. Chaotic Neutral turned Chaotic Good.
Str 18 (Conan is the definition of Badass Normal) Dex 16 (agile like a big cat but not too overkill) Cos 18 (see strenght) Int 14(He shows to be pretty smart in battle and as a leader of soldiers) Wis 12(He's fooled sometimes) Cha 16-18(He's a competent leader of men, every woman melts like butter in his arms and he became a king).
To compare him to real life, he wouldn't be like a power lifter like Hafthor Bjornnsen, they're the absolute utter strongest a human can be, Str.20, but they can do almost nothing else, they're not athletic. The Conan in REH stories was more like a football linebacker, extremely strong (Str.18) but also very athletic (Dex.16), can move fast, jump, climb, whatever.
Comments
he is a triple multi class Kensai / Barbarian / Swashbuckler

What do you think @Metalloman ?
I might also make stats for the villains and supporting characters.
