Any of them should work. Bear in mind though that not all of them have a German translation included. In such cases, custom dialogues will of course be displayed in English (or other included languages).

The IWDEE without mods already is as smooth for the gaming experience as possible. Mods for this game help to add additional colours into the game, but they are not necessary.
For e.g., the Wizard Slayer Rebalancing for BG:EE, BGII:EE and IWD:EE mod makes this kit on par with other fighter kits, so you can no longer be afraid to include a Wizard Slayer into your party.
The Divine Remix and the Frosty Journey add a lot of interesting kits to the game, try them for your amusement.
BG2 Tweaks help to remove many restrictions, such as particular races for single classes, so you can make a dwarven skald or a half-orc blackguard ala Dorn.
I can recommend them.
If you want some party interaction, try IWD NPC.
But the main problem, on the mod front, for IWDEE to me, is that it lacks difficulty-enhancing mods similar to the SCS mod for BG. That mod is a must have for me while playing BG. But the fact there's no such a mod for IWDEE makes me think that there's no one single "must have" mod for IWDEE.
