A lot of variety in responses! My favorite quests are not so much the actual quests but once with really touching moments to them.
So I like the Unseeing Eye quest for its ending, restoring the faith to the diseased followers and convincing them to call Amaunator to save them. And I love that Amaunator was a minor recurring theme in several of the quests.
I like the reveal of Solaufein and Phaere's past love and the tragic nature of drow society in stamping out all that is good in a person. And the double cross with the dragon eggs.
I enjoyed the Umar Hills quest when we first arrive; the atmosphere is spooky, we have some named townsfolk instead of Peasant 1 and Farmer 4. Each has a theory as to what's been going on, we can follow these leads until we narrow down the options. The tragedy of Merella. The option to reconcile the ogres with the town.
Similarly I liked the Tradesmeet quest chain. Multiple issues concurrently with druids and genies, yet resolved in the same map. And the reactivity of the city; before we meet the druids trade is frozen and no one comes out of their homes. When we've resolved that issue, we get involved with feuding noble families, the unresolved tanner quest is finally resolved, some great items for purchase.

It's a proper adventure in its own right really.
Yeah that's one of my favorite BG1 quests. It feels like it could really be spun out into its own mini campaign. Make Delainy/Durlyle into a recruitable companion and have a Yoshimo situation where we find out their true nature.

I love TOSC. I remember laughing at Dradeel's cook book and the butterknife of Balduran.
The end of Werewolf Island is pretty painful though, I always found myself desperately avoiding battle because I don't want to accidentally kill Farthing.
You have to give credit to Saemon Havarian. How you are forced to get "a gift" from him and how gith board the ship and hes like "pardon? Cant understand what you're saying..." Sneaky devil
Definitely the House Despana power struggle in Ust Natha. So many possible outcomes, so much depending on the player's agency. That's real roleplaying.
For BG1 my favorite quest is probably the whole epic Cloakwood campaign, starting with the conflict of the Sashenstar noblemen and the druids, the tragic tale of the two brothers with the spidersbane, the encounter with Centeol, the discovery of the wyvern cave, the fight at the entrance with Mellium, exploring the bleak mines and fighting iron throne mercenaries until the epic battle at the bottom floor with Daveron, a lot of buildup and a epic conclussion.
for BG2 my favorite quest is probably the Tanner murders, if done correctly with interrogating the involved and gathering clues, and confront the murderer only for him to escape, to the later encounter the murderer again in Umar Hills and finaly put him down is quite satisfying.
Speaking of Satisfying i also find it the Sarle ore quest interesting, when it also lead up to an encounter with the child killer Neb from bg1, i find it very satisfying to kill Neb and relase the spirits of the children he has killed.
the revisit to candle keep. i consider the main quest line of bg1 up until you get to the title city weak. then it picks up and you get the the series of events that leads to this section. where you get the reveal and the last 3rd of bg1 happens and it feels like your playing another game then the last 2 thirds.

Yeah that's one of the better quests from that angle, I just wish the underdark wasn't given a time limit on most quests as it always makes that part feel so rushed.
The encounter with the wraith is pretty interesting, especially if you are romancing anybody.

you'd think after falling for that once [ candlekeep caverns] charname would have saw through it.
Charname has an odd affliction making them less and less savvy the more life experience they accumulate.

Really liked Demogorgon concept, that "empty room" with giant chains, weird and scary atmosphere and the lines, voicing - all good. In general, Watchers keep is probably my favorite dungeon, so many strange things going in that tower
3rd level of Watcher's keep – a complex maze, anti-magic zones, a mini blood war, and a game of high card with a deck of many things – what's not to love?
I've gotten to the point where I intentionally leave behind Yakman's journal so I'm forced to wing it and just revel in the chaos. One of the few levels in the BG series that still feels a little different every time.
