    Regarding a combination like F/M/T: To cast mage spells do you need to take armour off? Likewise for thief skills I assume you have armour limitations too? If so doesn't the constant swapping become really annoying quickly?

    No, you wear mage robes and cast armor / spirit armor.

    or wear elven chain (in BG2) and cast buffs

    ^^ these, and also there's shield, which gives an AC of 4. (aka -6 AC, aka AC 0 with 18 dex) and there is a shield amulet pretty early on in BG1... (Nashkel Carnival)
