Well, aside from cheating or looking it up in the game files, there isn't really a way that I know of. Ctrl-Q can force any creature to join the party so that you can look at all their stats.

I think you can enable to-hit-rolls and keep a close look at the dialogue box. If, during the fight, a roll hits and the same roll -1 doesn't, it's just simple math:
    ThAC0 - (to-hit-roll + bonuses) = AC
Ok, not that straightforward and a little based on luck, but with a few save and reload it's doable.

Except with debug keys or calculating it like @Arneb said you can't.

Baldur's Gate is extremely guilty of cheating by giving enemies low base AC for no good reason so you can't always judge it by looking at their armor or lack thereof. Later games do it less but they still cheat on various other things.

Ever see a mage with better AC than a warrior decked out in a +4 shield, the gauntlets of dexterity, the ring of protection +3, the Helm of Balduran, and the Big Metal Unit? Sure you have! His name is Shandalar! He is a nigh unkillable nut who sends you to an ice island to do a chore.

Anomen with the aforementioned equips: -23 AC
    Naked Shandalar: -24 AC

    Seems legit...

Could be legit if shandalar turns out to be a silver dragon in disguise.

In the old days you used to be able to kill him by . . .

Making him hostile, running out of his field of vision and then sending a bunch of skeletons in to attack him. You could go off and make a cup of tea and come back half-an-hour later when they were done.

    Does this still work?
