2. "You know who I am" - because the letter in Rejiek's shop tells you that he's really Darcin Cole.
3. "My masters will kill you for giving me what I want!" - if you give him the Silver Dragon blood, then he'll finish the Human Flesh +5, but as soon as he delivers it to you, his Twisted Rune masters will appear and attack.
4. "I don't even want to know who you are" - his letter explains that he doesn't need to know your name.
5. "Think of a letter" - the letter found in Rejiek's shop is the explanation of how to reveal him.

I recognize several characters that would attack you for offering them too much pay, simply because they won't trust you will give it to them, or that it is a setup. Can't find any good candidate though...
Yep. 1. "The Sane" straightforward enough. 2. He'll accept a bribe but... 3. If you have the money for it and choose to make the offer too big you have to fight him instead. 4. If you get put in Spellhold as an inmate , you'll met him right away, otherwise you'll see him after finishing the maze.
