I always get lost in BGII. But in BGI, you get:
STR +1
DEX +1
CON +1
INT +1
WIS +3
CHA +1
I'm pretty sure the stat increases in BGII also depend on alignment.
Breaking this all down for me would be very helpful. TIA.

1. In the Spellhold dream sequence, you have to lose 1 point of any ability score besides Charisma.
2. If you choose to sacrifice yourself in the Nine Hells's Selfishness trial, you lose 1 point of Dexterity.
3. Choosing one of the evil options in all of the Hell trials will give you +2 Strength (I'm not sure which one; you can find it on Gamebanshee or a similar site).
4. Choosing one of the good options in Hell will give you +1 Wisdom and +1 Charisma.
5. You can get +1 to every ability score using the Machine of Lum the Mad near the bottom of Watcher's Keep. You need to know the proper code for each one, which you can find online or in the little notes scattered all over Watcher's Keep.
@semiticgod, you forgot about Deck of Many Things - +1 to primary stat =]
TotSC: Wis +1 (Durlag's tower)
BG2:
Demon (Spellhold dream sequence) -1 to one stat: Dex, Con, Int or Wis.
Hell trials:
Fear:
Good: Immunity to weapons, up to +1
Evil: +2 Con
Selfishness:
Good: +10 magic resistance, but you also lose -2 HP (first door) -1 Dex (second door), -75000 Xp (third)
Evil: +2 AC
Greed:
Good: +2 all saving throws
Evil: +15 Hp
Pride:
Good: +20% resist to fire, cold and electricity
Evil: +2M Xp
Wrath:
Good: +1 Wis, +1 Cha
Evil: +2 Str
ToB:
Machine of Lum the mad
+1 Str, +1 Dex, +1 Con, +1 Int, +1 Wis, +1 Cha, +5 magic resist
Deck of many things:
If first draw was bad: +1 to main stat (depends on class) and +10 Hp
No bad draws: +10 Hp or +5 Fire resistance
Here is some info on the deck of many things found on WK 3: http://www.sorcerers.net/Games/BG2/Walkthrough2/items/deck-of-many-things.php
As you see it must be bad before it gets better
Tip: drink a potion of magic shielding and get ready to reload (as Kurona pointed out)
