Boo, I believe, represents and symbolises the murderous force that is Bhaal. The red(ish) ball of tooth and claw.
Boo is famous for 'Going for the eyes' This in itself is a way that the character is in fact destroying what is actually seen (literally destroying the perceptions of the reader / player) so that the unreality, the new world, created in the minds eye / on the computer screen, can come to the fore.
Boo is also a useless item. He can only squeak. He is powerless. Yet at the same time, he empowers the player. He is the only character that can squeak on command (from the backpack screen no less!) and perhaps more importantly inspires inherent jealously and protectiveness from the flawed character of Minsc.
It is also recognised that Boo, is the intellect behind Minsc and a cause of ire in the other protaganists, who often ridicule Minsc, whilst giving credence to Boo and what he represents.
We then need more Boo. Not less.

No, there is not enough Boo in this game or any other.
However, I thought too long on this and perhaps I have found a flaw in the path of Charname in the series that is known as Baldur's Gate. The temple district and the cult of the unseeing eye. They were not worshiping a beholder, but a beholder who was a prophet of Boo. Cast out the eyes of wickedness is what Boo stands for. Yet, Charname shuns the unseeing eye and the philosophy of Boo and uses the rod against him for the benefit of a long dead god. The rod should of been used for a higher purpose. It should of been used for what Boo would use it for: descending back into space among the stars and constellations of the Gods where he belongs.
The Charname took that away from him, and took his place instead. Boo had much to teach the world, and in Charnames selfishness, took that away from us.

Boo should also be a once per day item that blinds a target for 1d4 rounds imho.

Is there any option that says "I want more Boo" without saying that I'm satisfied with the current amount of boo?

Boo is smart. Boo says you have not phrased the alternatives right. “Is there enough Boo in the Baldur's Gate Enhanced Edition?” Clearly, the answer to that question is no, there is not enough Boo in the game. Boo says there can only be one alternative to such question and that is “NO, THERE CAN NREVER BE ENOUGH BOO, NEVER, NEVER. I GO FOR YOUR EYES -AAAAAAARRRRRRRRGHHHH.”
The polymorph is irrevocable. How 'Boo' feels about now being the cherished property of Minsc is an open question for your imagination.
