The game was easy for me, but that's because I've been playing the EE games for years. It's my fault, not the game's fault.
Also, on the topic of stat generation, I generally don't like leaving anything up to luck unless necessary. If you want to challenge yourself, instead of just picking a random set of bad stats, create your own set. For example, you could deliberately give all your characters extremely low Dexterity or Constitution.

Ok, lets just say that if you minmax your party, then the game is cakewalk on core difficulty. I don't think we should do anything about this. If you want to minmax, play in HoF mode.
Best part is even when HoF mode is enabled, people don't really have to min/max to still progress through the game!
Of course, playing with the actual PnP rules (mad respect for those who acutally follows it) won't get the party very far in the HoF mode, yikes.

Well, when all you have is a Dagger +1 to do any damage against him, I can assure that you can't swiftly dispatch him. Same thing with that Spectre outside. Unfortunately I had made the mistake of selling off the other magical weapons I had come across because none of my characters had any profiencies for them. Big mistake. It took awhile to figure out how to get rid of his disease as well. At first I tried to make it back to Kuldahar to pay a visit to the Temple but my character never made it. Then I finally clued in. Then there were all those traps that my incompetent Thief kept missing. Nasty area all around! The rest of the Vale wasn't all that difficult though.

Hardly - unlikely your unsubstantiated claims, one needs only look at the forum list to see people complaining about both the game being made easier (typically you) and the game being made more difficult. As the game cannot be both, it must therefore approach some semblance of balance.

I blame you for learning your lesson and having magical weapons equipped even if it was a dagger +1 with no proficiency points.
As stated before, there are ways to make the game more challenging for a person finding it too easy.
There are also ways of making the game easier for those finding it too difficult (import higher level characters to begin the game for example).
It shouldn't be up to the developer to handicap your experience if it will hinder another player and their enjoyment of the game. They didn't take any of challenges away from the battles, they just added other tools players can utilize to face them. It is up to you if you choose to use them or not.
Veng only counted 98 problems, and unfortunately not finding the Bitch Queen's Envoy was one.
If you play IWD:EE without using the most powergamey kit options, its hardly easier. If you stick mostly to IWD vanilla class options and don't min-max, you shouldn't have an easy time. Offer your counter argument please rather than just making sweeping conclusions,
