Because in North American communications, all times are given in Eastern or Pacific. Everyone there knows what their offset is from those two references.

Though to be fair, Edmonton is rather common as well.
The US has most of it's population centered on the east coast and the west coast, which use the EST (GMT-5) and PST (GMT-8) timezones. Rather than forcing North Americans to learn 6 or 7 different timezone abbreviations and their individual offsets, they just use only EST or PST, as those are the most well known and used timezones in North America. For example, if you live in the CST timezone, you're used to being 1 hour behind EST and 2 hours ahead of PST.
Of course, the best timezone to use is GMT, as it's the world standard, and most people know their own GMT offset. People outside North America don't live in, say EST+9 or PST+12, but in GMT+4.
Just finished a play through with a half hour to spare before dl time. Now I have to find something productive to do with my time. Like laundry. ... or maybe I can get a speed run through...
