The answer is yes. There is a program called nearinfinity which will make all sorts of changes.
I usually use it in conjunction with EE keeper.
I think that they are actually available on the Beamdog forum.
    Google the terms.

I agree with @Wise_Grimwald and I recommend both EE Keeper and Near Infinity. EE Keeper is great if you change your mind about something during your game, e.g. picked clubs as a weapon but realize you should have picked quarterstaffs, or want to change the character sprite of your fighter/thief to a hooded thief. You can change NPC photos, or even make changes in ability scores and other things if you have some desire.

Near Infinity is good for altering weapon or armor appearance or item abilities as you want, e.g. change color of a magic buckler for your assassin from bright blue to black, or add abilities, etc.

Is there a way to make it so if I appear as a gnoll, I'll actually have a visible weapon?

@OniDaimyo See the experience by @ObsidianShade here - https://forums.beamdog.com/discussion/63275/im-debating-a-gnoll-or-flind-playthrough. As a gnoll, you're limited to the animations of a greatsword/halberd, and although you can use any weapon, they'll be invisible if they're not greatswords/halberds.

Actually it doesn't even show greatswords...and Near Infinity I thought could fix that?

NearInfinity can't magically create animation files which don't exist.

Hypothetically, if you created your own animation frames, then they could probably be added into the game ... but I've never heard of a modder attempting that, it's a specialist artwork skill and a huge amount of work. Even the professionals at Beamdog have (mostly) avoided creating new sprite-animations for the EEs, because it takes too much time and effort.

Gnolls (flinds use gnoll animations) have a long sword animation (they wield special bastard swords), but not a two-handed sword animation. Try equipping a bastard sword or long sword.

Actually, it has been done (although neither creates new gnoll animations). Still, it's not something you can just flip a bit in NearInfinity or something. As @Gallowglass said, it's a *lot* of effort, editing (potentially) thousands of animation frames, and requires a skilled artist.

EDIT: Gnolls/flinds only have weapon animations for weapons with appearance S1 - Long sword and HB - Halberd. So, no bastard swords or two-handed swords.

I expect that it would be possible to give bastard swords a long sword appearance, then at least they would have a weapon even if it isn't quite correct.
