The Baldur's Gate soundtracks are amazing, aren't they?
My favorite piece of music from BG1 is "Safe in Beregost." It has a calming, yet slightly tragic feel to it. As if you're OK while you are there, but you're going to have to leave soon and face a world full of evil and ruthlessness.
My favorite piece from BG2 is "Trademeet." Just a beautifully composed piece of music. Short and sweet, but long enough to make you feel like you are in a place of affluence and beauty.
My favorite piece from ToB is "Bhaalspawn Battle." Epic music that fits the epic battles you fight.

Edit: I just remembered. It was the Dungeon Theme from Heroes of Might and Magic III
During the game I like music from the Jaheira romance.
And Sam Hulick's works for EE are good too. But probably the music for SoD trailer is his best BG theme yet:

@Kamigoshi Lol I always skip the credits, so I think this is the first time I've heard that.
I also really like "City Gates" from SoA and "End of the Saga" from ToB.
The music from Siege of Dragonspear we've heard thus far is utterly amazing as well. It may end up becoming my new favourite.
It is sad but the tracks I like the most are from the enhanced edition and I don't have a youtube video to link them -_- This will surely please Beamdog.

From BG1 my favourites are Candlekeep and The Lady's house . The first gives me the feeling of adventure at the beginning where everything seems simple (you're still lvl 1 and excited with your new character and run) and you don't know the complete chaos that will soon follow after your departure from Candlekeep. The Lady's house plays in the temple in the Friendly Arms Inn which is the first temple you visit. The music is so calming and soothing, and a bit magical (divine magical ), it fits perfect with the peaceful feeling you have when visiting a friendly area after spending hours in dungeons and the wilderness.
In BG2 I really liked how he changed the theme into more eastern-type music, like the aforementioned Tradesmeet. It really fits with Athkatla and the areas you visit. My favorite ones are the main theme especially the calm part, which reminds me the hours of re-rolling and the Bridge district which re-uses the wonderful melody we see in the Friendly arms Inn. As you can see I really love the game's soundtrack, as it reminds of very fond memories of playing this great game.
In the fantasy genre, it's between the Baldur's Gate series and HoMM3 for greatest soundtracks in that genre for me. Matt Uelman did an amazing job with Diablo also.
Jaheira and Aerie's romance themes are also very fitting for their characters. And Waukeen's Promenade always had a very epic and foreign feel to it. It was a good introduction to the adventure.
The theme of Irenicus' dungeon felt very suspenseful and dark, though the original had an awful bug where the battle music would go on for ages.

Really uplfting and you imagine just how much fun it must be wandering around and sorting stuff out because frankly, you are awesome.
In BG2, the battle track in the drow city. I could never find it even on youtube and I have never found the track name anywhere. It starts really quiet with some bell chimes and then goes full epic mode. It's used in a few other places (such as the githyanki area in WK right before the mighty salad)
I also quite like a specific ambient noise that almost sounds like music, it's used in most dungeons (firkraag's, shade lord's). It's hard to describe, but it's like wind blowing at different pitches. It's even used in the severed hand for IWD2.
In ToB, I liked the ambience in the little swamp with yaga's mom. It's been a while since I've played ToB though.
In IWD, kuldahar's theme combined with the windy gusts once literally made me just sit there, stunned.
Lonelywood is also an excellent mix of beauty and harshness of the north. Jemery Soule just keeps nailing it.
IWD2 had its moments aswell. The palissade fight, the bridge attack, the first seconds after you enter the ice temple and when you fight the lysan fangirls (though extremely short music bits). Pretty solid stuff aswell

It bothers me when an optional boss theme is more epic than the final boss (for SoA, the ToB track is awesome). Never liked the Hell battle track much.
The Dragon battle music doesn't actually play during the fight with Adalon (if you're playing as an evil character.) There is another track, but I can't remember what it is.
It surprises me that no one mentioned the trailer music of Baldur's Gate yet.

I once wrote out all four parts so I could play this chorale on the piano and sing along with the bass, tenor, and alto. (Soprano is too high for me, of course.)
Anomen's romance theme is my second favorite. A lot of people never really listen to it or appreciate it because they hate the character. But it's a beautiful brass chorale piece with some string doubling, in the style of Aaron Copland, very noble and inspiring, and like coming home after a hard struggle.
