It's not possible to zoom in in IWD2EE, unfortunately. Without access to the source code, there's no guarantee that we'll be able to implement all of the features of Beamdog's EEs.

How can I make the game go to higher resolutions? Like 2.5K for example. Because the game becomes a small square. It doesnt stretch to full screen even if its full screen.

Have you tried starting a game? The title screen and a lot of the menus don't use the whole screen, but when you actually load a game, it does take up the whole screen.
Setup-iwd2ee.exe and the folder called iwd2ee need to be taken out of the folder called IWD2EE-master and put directly in your game folder (the folder called Icewind Dale II).
1) Before you install IWD2:EE, if you installed IWD2 from GOG, please run setup-ddrawfix.exe (found in your game folder) and go through the steps to uninstall it. IWD2:EE comes with a preconfigured cnc-ddraw replacement for ddrawfix, but won't use it if it detects ddrawfix is already installed. Critically, cnc-ddraw allows the game to upscale to your monitor's resolution.
2) Install IWD2:EE like normal.
3) The resolution IWD2:EE asks for when starting is the resolution the engine targets. Since the game was designed for 800x600, and the engine can't upscale on its own, selecting higher resolutions here results in a small image size. So, when starting IWD2:EE, select a smallish resolution that matches (or is close to) your monitor's aspect ratio. Selecting a resolution just above 1024x768 works well. If cnc-ddraw is being used, it will then upscale the game from this resolution to your monitor's native resolution, resulting in an image that fits your display.
Menus and such will appear centered in front of a black background if you have a widescreen monitor. The world screen always fits the entire display, like in OlvynChuru's screenshot.
A bit convoluted, I know, but that's the difficulty of working with an engine that's ~25 years old.
Couple of things I noticed, one: it would be nice to not have to select the resolution every time I start the game. Two, I noticed something that I wonder if it's always been there or what. The name of the ghost weeping in the inn is VEIra, but when you talk to the bartender in the Salty Dog he says the name of Donovan's ship was VIEra's Gaze, named for his wife. Just a slight continuity thing that would probably be something to put in a general bug fix patch or something.

I found that after uninstalling setup-ddrawfix.exe and installing the EE Mod, 1360x768 works the best for 2.5 monitors and higher.
Now the game looks superb.
Do any other cool mods exist for this game? I can't find any. There are only like 3 on Nexusmods.

IWD2EE currently doesn't have a German translation. Technically you could still install it, but all new strings that are added by IWD2EE will be in English.

Edit: I'm curious about the Special Edition mod from Nexus, though. There is a component that updates areamap backgrounds with software-rescaled tilesets and adds smoother Fog of War graphics. I guess it should be compatible, but is it unnecessary? Couldn't find anything in the readme about enhanced areamaps.

The component that update tileset and smoother Fog of War seems to work (testing it in the prologue). Regarding it's necessity... it's a matter of taste.
I wish to know whether this is the right place to report an issue, which is not necessarily be a defect.
I am using Windows 10 _emulated by QEMU_ under a Ubuntu host. The version of IWD2 is GOG. I tried to start the game by 800x600 resolution. It shown an error message of unable to find a 32-bit color depth display mode. While the detected color depth mode is 8-bit, the actual displayed color depth is 32-bit, as the screenshot color is solid. I believe it is difficult to change the detected color depth at the QEMU. So I wish to know whether it is justified to relax the color depth checking at the IWD2EE?
@csmth96: Are you using GOG's default ddrawfix, or cnc-ddraw? If you're not using cnc-ddraw, try switching to that, (see my post here). Otherwise, I'll take a look, but I don't think there's much I can do. IWD2 disabled the hardware acceleration that was present in older engine versions, so everything is rendered in software. As a result the engine manually blits based on the resolution's color depth. IWD2:EE hooks some of the rendering functions, and in order to keep things simple we only worried about the 32bit color depths.

@Nebelmann: Try downloading the "WeiDU-Windows-249-x86.zip" file from https://github.com/WeiDUorg/weidu/releases/tag/v249.00, and extract the "weidu.exe" file. Replace IWD2:EE's "setup-iwd2ee.exe" file with the extracted "weidu.exe" (renaming it in the process), and try installing again.

An enemy with a ranged weapon will probably switch to melee. An enemy caster will probably continue casting spells, provoking attacks of opportunity.

Woh. That is extremely different. If a character or enemy has +20 AC bonus (natural protection for many monsters), that is -10 damage to all physical attacks, which is huge.
nb: removing one option/mod is pretty easy. Just need to run the Setup-iwd2ee again and follow the lines...
