For me it was way back when the game first came out, but I can say with relative certainty that it was a human mage. That is pretty much the only thing I play.
As for my party composition, I am sure that it was as follows:

I wanted it to be Minsc as the final character, but didn't have room for Dynaheir as my main was a wizard.
First finished Tutu with a half-elven Blade named Kheltick. Alas I didn't keep the saves, but I can remember Imoen, Xan and Ajantis being in the party. I probably had Finch as my cleric and probably Coran or Kivan as an archer, I can't remember whom.
Finch rocked! Her glasses were a little OT... But on the other hand I never had an NPC die from being chunked as often... Helmets are really a must for melee...
BG1 - Human Fighter with 3 INT and 3 WIS but 18s in everything else. I think I used the canon party (after Monty and Xzar were killed in an argument with Khalid and Jaheira)
BG2 - Half-Elven Sorcerer (I rolled a 97 in 3 rolls for this guy, it was my highest roll ever) with Jaheira, Minsc, Aerie, Nalia, and Yoshimo (later Imoen)
My first Baldur's Gate 1 playthrough was as a Ranger with a Two-Handed sword and a Composite Long Bow. I'm fairly certain I had Jaheria, Kahlid, Imoen, Minsc, and Xan in my party.
BG2 I played a Cavalier, and ran with Jaheria, Aerie (romanced and knocked up with god-seed), Jan, Minsc, and Yoshimo. His betrayal was heart-breaking at the time! I then picked up Imoen.
My first ToB completion was with an Archer, Viconia, Jan, Minsc, Aerie, and Sarevok
Nowadays I prefer to focus on the single classed NPCs (if any at all). Viconia, Edwin, Keldorn, etc. MUCH less xp splitting.
Athra the Paladin... Along with: Jaheira, Imoen, Haer'dalis, Aerie and Jan Jansen. Although Naerie was in the party for a very long while instead of Haer'dalis. I liked the interaction within the party this way. Plus, it's a magic-heavy party and I like playing with magic-heavy parties.
Its been so long I can't even remember what my first real Baldur's Gate character was. I think a wizard?
I do remember the first one who stuck. It was actually a trio I made and played several times. In retrospect I gave them a pretty bad back story and characterization. Eventually the trio just went to two twins named Ghost and Shadow who were an expert arcanist and a super tough warrior woman.
Since I've installed EE my first playthrough was a paladin Cavelier. It took me about 10 new games til I finally made up my mind on what to play my first full game as.

I actually never beat vanilla BG and didn't beat until Enhanced Edition came out, but thats because there's so much difference compared to the second one that I just don't enjoy but my game completion was An Undead Hunter An Calviler An monk ew no An Priest of Lathander. Did I spell that right? Neera and Imoen. Originally I had created my own wild mage, but on my first day of playing bgee I happen to stumble upon Neera and decided to take her along for the ride.
My first playthrough was a Paladin. Can't remember what all party members I used as I started playing it when it was new. I played a paladin for my first playthrough in BG2 imported from BG1. Picked up the undead hunter kit, because I still hate level drain from early days and earlier games.
My first BG PC was an Elf Sorceress. My party was Jaheira, Shar-Teel, Imoen, Viconia and Edwin in the first game, and Jaheira, Korgan/Sarevok, Yoshimo/Imoen, Viconia and Edwin in the second.
Human Fighter with Imoen, Khalid, Jaheira, Minsc, and Dynaheir... Xzar and Montaron ran into some trouble in the Nashkel mines... and Xan was...well Xan... I took him long enough to get back to Nashkel and recruit Minsc.
In the original, I think I beat the game as a mage, but I can't remember, because I was 5. In BG:EE, I went with a monk (although the first one I started was a wild mage in my game with my family, and it drives them crazy XD), and that was difficult. I imagine a monk will become incredible later on if it's as effective as it's listed as in higher levels, but in BG1, it's pretty difficult. A lot of fun though.
I had played BG1 a couple of times before actually finishing it, and that was some year after ToB. So my first character that completed BG1 and eventually the entire saga was a Paladin, Cavalier.
I had never completed BG1 before the Enhanced Edition (shame on me!). So the first party I completed the game with was: Glorfindel the mage/thief elf Neera Branwen Ajantis Kivan Yeslick
Now I'm waiting for BG2:EE to continue with the same character. I've played normal BG2 a lot on times in the past but never completed it for various reason (the game wasn't mine but my best friend's XD). But this time I'll finish it!
I'm not too fond of the NPC thieves, as I want my thieves doing 3 things mostly... Lockpick, Find Traps and Detect Illusion... So I used multiplayer to make my own Thief to company CHARNAME... Plus, BG2 has a severe lack of thieves in general.
And the Party that managed to beat Sarevok was
