The quotes I find myself saying to myself most often are the miners' quotes, while at work and not wanting to be there.
"Get me out of this hellhole!" "I'm sooo tired." "It's so dark." "*cough* I think I'm coughing up blood."
Not where anyone can hear me, of course. But for some reason, just expressing the pure despair of the miners to myself makes me smile and cheer up a bit, just because I know my job isn't really as bad as theirs.
I really like Aerie's improved war cries from ToB if you are romancing her.

Press 2! Press 2! Nah...really. I played with every NPC in BG2ToB, but never liked Aerie with her constant whining. Or that jerk Anomen for that matter. Or Jaheira, sometimes... But that's the beauty of it...if you don't like them, you don't play with them so ... yeah, well, that's just like, my opinion man.
Just saw my new favorite quote at the end of Rasaad's quest.
Right after you kill Gamaz, you are given a couple of dialogue options that include the line, "I'm sorry, Rasaad. I hope I never have to kill my brother." Knowing the ending, that was the first time I have laughed out loud at the game in a while.
