I would give you a link to some of my favorite musics from the EEs but no one has put them on YouTube... So yeah...
I like Neera's theme from BG1:EE. I like the main menu theme for BG1:EE a lot. The Black Pits 1 battle music is nice. I like Rasaad's theme. I like the new Battle themes from ToB too. Resurrection Gorge has cool music. So does the wild mage camp.
Well... The music is in .acm format, but NI can export it as .wav. The only problem is that each combat theme is broken up into little pieces so that the game can do cool stuff with it. In the game these pieces are actually assembled by a script of sorts... To make them into a single track you would have to export all the pieces as .wav and use some manner of program that I do not have to splice the pieces together, and maybe even change their format to .mp3 or some such.
So many to choose from, but the 2 that stick out are Morrowind and the Tristram Theme from any Diablo game. Though I have to give an honorable mention to the soundtrack of Divinity: Original Sin. Aside from being a great, modern RPG, it also hit a grand slam in the music department.

"Annabel Raises the Dead" is my favorite song on the entire thing so if you don't have time for the full opera I at least recommend giving that track a listen (it starts at 7:34).

It's the instrument of my soul I haven't played WoW in ages but I LOOOVVEED the Kharazan raid back when I played in Burning Crusade. It was just a creepy place and the music was wonderful.

Edit: Makes me want to play a Evil Elf character in an RPG that kidnaps/kills children.
