I always missed the fact that in Trademeet, once you accept quest to get rid of the Dao Djinni, leave the city via the North Eastern exit - you'll run into a Shadow Thief who wants to help you get rid of them, since they can't steal from the traders if they aren't trading. She'll tell you exactly where Itafeer is, but, more relevantly, you can also kill her for the handy Gauntlets of Missile Snaring.
Probably better known, but in Jaheira's quest against Baron von Ployer, there are several options for the ending. You can fight von Ployer and his mages, but you can also either pay the mages to not turn up, or even pay them more to actually join you and help in the battle against von Ployer!
Ah, Montaron, alas, he was killed in BG2 and a Harper assassin took his place. But did you know that you can actually find Montaron's body? For this you need to be able to get back into the Harper Hold after Monty's death, which, thanks to the bug of standing someone in the way of the door to prevent it closing being fixed in EE, means having Jaheira in your party. Anyway, one of the chests upstairs has the body in it, and finding it gives you 20,000 experience!
I think there is also Pallonia who drops references to both BG2 ("Well, just across the southern mountains there are troubles brewing in great Amn that will make our current concerns seem small by comparison") and NWN ("To the far north there is a city where winter never rears its ugly head").

Like with the Vanilla BG2 loading screen tip that said you could import your BG2 character into Neverwinter Nights to "continue your adventure" - a feature that was dropped after BG2 shipped but before NWN did.
Hmm, here's another. If you refuse Brevlik's thieving quest in the Elfsong Tavern in a certain way, he'll talk about how his purse seems to be missing. Unable to pay his bar tab, he later asks you to buy his cursed ring off him.
Speaking of thieving quests, one that probably most people know is that Narlen Darkwater's thieving quests will affect the outcome of the quest to steal the airship artifacts. The mage there betrays you after you've succeeded, trying to kill you. I think that the entire guild may turn on you, which may be Charisma or reaction dependant. But if you've done Narlen's quests then he turns on his boss, kills the mage and sticks up for you, saying that you're as much a member of the guild as anyone and that You Have Outlived Your Usefulness is a messed up thing to apply to such as you. His boss relents, and you are given full run of the place.
Did you guys know that Bub Snikt (the ranger type you meet south of Nashkel) is a not-so-carefully concealed reference to Wolverine from Marvel Comics' The X-Men (among other series)? Bub is the pet/nickname he often uses to refer to other characters, and the "snikt" is translated from onomatopoeia to English as the sound made when he pops his adamantium claws. He mention being able to sniff out monsters from miles away, and heightened senses (particularly smell) is one of Wolverine's numerous special abilities.

I actually had no idea about this. I always just headed straight for that abandoned house to rescue Jaheira as quickly as possible. I always wondered why there would even be other options, since this seemed to be the most obvious and logical course of action.
I had always thought the Ployer quest seemed too brief and obvious, so I'll have to rethink that now that I know there's a bit more depth to it.

Did you know certain enemies are scripted to continue casting spells even when being hit? (the devs have confirmed this - they cast their spells from a script rather than book or scroll) Mulahey, Bassilus, and the leader of the Amazons are among the ones that can do this, I believe.

When the deed was done and Tanova lay dead, I was exultant, but not for long. Jon went mad with fury, and using his powerful magics, divined the identity of his wife's murderer. He arrived at my tower, and I allowed him entry, desirous to finally consummate our love. Jon disabled me with his spells, then he cursed me to this body and set spiders to feed me and keep me alive. So you see, if you were my friend, you would kill me.

That would also explain the origins of Bodhi's vampire Lieutenant, Tanova - presumably she is one of his experiments in cloning her? You kill another clone in the SOA prologue and encounter several failed attempts, but a "living" Vampire of the same name surely cannot be a coincidence.

Did you know that in the Mass Effect 3 citadel DLC
clone Shepard takes over the Normandy and moves out all of Shepard's cabin belongings. You can click on them and Shepard will react. One of the cabin props was a space hamster. If you click all the way to the last dialogue he will tell the hamster that if anybody tries to do anything to them to "go for the eyes!" referencing Minsc.

I've entered there because I thought it was like something public but guarded, you know, it didn't have a lock, and after meeting with some nice items I ever go there.
Actually I stumbled in there on my first blind playthrough totally for RP reasons (Charname didn't even have Katana proficiency, though started training in it after I found Celestial Fury).
Basically I was looking for Cult of the Unseeing Eye... I know the clues pointed to the sewers, but upon seeing a suspicious building closed to visitors in the Temple District, which was otherwise mostly public buildings open to public access, Charname had some suspicions. This was reinforced when he noticed an access point to the sewers right next to the entrance to the compound, and a sightless priest standing guard.
That was reason enough for Yoshimo to sneak in and have a look. Of course the party are confronted by an occupant who seemed to be hiding something. Naturally the party backed out, but Yoshimo sneaked in again for a closer look. He searched through the lower level of the compound, not actually stealing anything, just looking for any clues as to the purpose of the compound, and potential links to the cult...
Suddenly a swarm of vile creatures are summoned by some arcane trap... Yoshimo runs for his dear life and reports back to the party. Clearly, somebody willing to summon Glabrezuu to guard their compound is up to no good, and has something unseemly to hide, so the party storm it by force... Two reloads later... "Wow Celestial Fury! I need to learn how to use this Katana!"
