In our latest MP session we found out you can keep Officer Vai around by keeping one bandit scalp in the inventory when you sell them to her - as long as you still have a scalp in inventory she doesn't go away.

Er ... no. Officer Vai doesn't go away even if you sell her all of your Bandit Scalps. She only goes away if you speak to her with no Scalps in your inventory.
In ToB, when Elminster appears, you can pick his pocket. He has a +2 Cloak of Protection, a +1 Amulet of Protection, and a +2 Ring of Protection. Apparently being the favoured of Mystra lets him use all three at once.
It's not just ToB. If you're doing Jaheira's extended sidequest with the Harpers, whenever "Terminsel" shows up, you can pickpocket all of that stuff off of him if you're fast enough. Apparently he's got a whole closet full of protection items somewhere.
SCS: if you select the "give potions to NPCs" component, one of the most common potions given to fighters and thieves is the Potion of Invulnerability. However, for some reason (coding omission?) SCS opponents never drink these potions. They happily drink other buff potions like giant strength, healing, freedom etc but not their Invulnerability potions. You can therefore quickly build up a stack of Invulnerability potions to last you through the entire game just in chapter 2. The +5 to all saves for 5 turns is invaluable. PS: these potions are warrior only so SCS thieves really should not have these potions in the first place.
SCS mindflayers also get assigned potions but do not use them, and they are therefore a tremendous source for free potions.
The Fallen Paladins usually get assigned some very nice potions (including Magic Shielding and Magic Protection) and do not use them (might be related to the fact they start out neutral).
Using a powerful thief to instakill (backstab) opponents before they become hostile nets you all sort of goodie potions before they can be used.
Tweakpack: if you use the "mages cast scrolls at caster level" component of this mod, that can be a massive boost for your spellcasters but unfortunately it gimps a thief casting from scrolls with UAI. The thief has no caster level and so the spell is cast at its minimum power. A Magic Missile scroll thus cast only generates 1 missile, Stoneskin gets you minimal skins, etc. Beware!
Item Randomiser: there are a handful of items in the vanilla game that annoyingly cannot be sold (bug). A good example is the Horn of Blasting. However Randomiser restores their value and they can be sold for the correct price (this is part of the coding in case those items turn up in a storekeeper's inventory).
The Book of Infinite spells cannot be sold even with Randomiser...however it can be purchased if it ends up in a storekeeper's inventory.

If you can pickpocket them, doesn't that mean he's not wearing them? If they're just sitting in his pack, then he probably can't use them all at once.
All enemy gladiators in BP1 use default male1/female1 soundsets (useable by players). That makes them the only opponents in all infinity games to play an automatic line when greatly wounded.
(personally i never tire of hearing male1's gurgling death sound. it's somehow hilarious to me.)
In a word, no. To be perfectly blunt I find the SCS forum on G3 not a particularly attractive place to visit. There's few discussion threads, any thread you open is full of weidu logs because someone can't install Smarter General AI, and most of the posters don't seem to be natural English speakers. Moreover as far as I can tell SCS is a "dead" mod now. The last version was a year ago and I'm not sure David is working on it anymore, so is there any point in bug reporting?
The Town Crier in Beregost only ever talks about Bassilus. He doesn't bring up the iron crisis, bandits, possible war with Amn, etc. He's not much of a town crier if you ask me!

I haven't realized before that there's no mage robe against piercing damage. There're robes against slashing damage, against missile damage, against crushing damage, but no robe against piercing damage.
This can be one of those factors to actually use short swords and daggers for you thieves - for backstabbing mages - the less their AC, the more chances for you thief to hit them.
The lack of fog-of-war in Black Pits is fake. This means if you're a thief and you have a pretty good memorization of the "sight radius" in BG, you can get away far enough to hide in the shadows regardless of the enemies on screen. This also works behind pillars and such.
This may also possibly explain why enemies seem hesitant and laggy when they first spawn far away. They don't technically see anyone (maybe)
You can pickpocket the History of the Nether Scrolls from Duke Eltan in Chapter 5. However, there's no dialogue option to give it to the Keeper of the Portal until you go to Chapter 6.

Did you know that in the Marek and Lothander quest, you can give any tome of WIS to Jalantha Mistmyr, not necessarily the one from the temple in the city. For example, the tome from the Durlag's Tower will do fine.

When one of your druids is dueling Faldorn, you can have one of your other characters pick up your druid's equipment and give it to the druid. You're not supposed to have any equipment when you fight Faldorn, but no one seems to mind you doing this.
Did you know that when you return to Candlekeep, the items in the containers are there again. Thus, you can get another potion of Clarity on the second floor of the Winthrop's inn - and these potions are rare in BG1, with only ONE of them sold in Sorcerous Sundries. Thalantyr doesn't sell it.
Another potion of Clarity can be looted after (if) you kill Rieltar and his friends in Candlekeep.

He took them off, knowing, you would try to steal *something* from him, so it's obvious a move from a kind heart
When they succeed, they turn around and face charname and then they just play a selection sound.

Probably. But did you know that certain items, like the Army Scythe, get replaced when it happens, letting you buy two of them?
