Your best way to deal with them is always defense (protection from magic scroll, etc.). You can never count on interrupting them (though of course you might).

This is part of the original game, and from what I understand is deeply intertwined with the netinfinity engine. BioWare did this, because otherwise clerics/druids would often never get their spells off, which could be frustrating for a PC cleric or druid (e.g., divine casters don't have arcane defenses, such as stoneskin, blur, mirror image, improved invisibility, etc.). As far as I know, the chance is random. The point though, is no matter how times you smack a cleric/druid in the middle of casting, their chance of getting their spell off is NOT zero, so just don't count on interrupting them it is all I am trying to convey.
To put it succinctly, in a no-reload context, if you are worried about a particular spell being cast on your PC from a divine caster NPC that might end your run, protect your PC with whatever tactics/equipment/buffs that will insure your run continues - DON'T rely on interrupting the NPC's spells, because eventually your luck will run out as Thalantyr says.
It's one of those "Today I learned..." moments -- after playing this thing since the original 5 disc set.

P.S. Long after leaving Durlag's Tower behind *without* doing the last fight with the Demon Knight, I went back to that save just to see how hard it would have been. ("Off-the-record", as it were.) Summary: my buffed F/M beat him to death after having him waste some nasty spells on summons and a Minsc (Power Word: Stun stunned Minsc despite the Free Action Sword?! What the Hell?). BUT he managed to kill Neera (an inconvenience) and *destroy* Viconia (a disaster!) with a Fireball.
Q.: Given that I have both "NPCs do not die permanently" turned ON and Gore turned OFF, how would Viconia get destroyed? (I don't think it was anything like petrification.)
So, anyway, he is actually beatable in melee -- IF I had fought him for real. But I wanna checkout Viconia in SoD, so I am glad I didn't risk this in hindsight.
In my next run, I may have a melee charname solo him with a Scroll of Magic Protection....
If you carefully read the SCS Readme, the author of SCS specifically mentions that it does NOT prevent all kinds of chunking, and that specifically fire damage is able to still chunk possibly. I think he might have even mentioned demon knight as an example.
Lots of things done today, including picking up a fever of sorts. On the bright side, if it doesn't go too high I'll have more time to play.
Anyhow, witnessed some strange EE stuff. For one, we met some "brigands" en route to Nalia's keep. This is in vanilla a ch.6 (after Bodhi is killed anyway) encounter I think? I ran away.
Keep was fairly straightforward. I fought Torgal, his Umber pet and two mages all together. Buffed Gares with Pro Cold and had Jaheira smack Ice Storm on top of it all. Unfortunately, both mages had GoI - completely avoiding the effects.
This lasted a while. A *long* while. I hate trolls. The buggiest creatures ever to exist. Torgal just wouldn't go down, yuan-ti's summoned and summoned, and then summoned some more. My protagonist isn't protected from critical hits, and number of oponents got big really quickly, leading to him taking damage.
Aerie gets chased by Wraiths, slowed, dies.
Finally, after what seemed an eternity, Torgal is dead. Notice the yuan-ti at bottom left - Nalia dominated him.
Nice! He's got Disintegrate! And hasn't used it yet! I have him cast it on his pal - but his MR stops it. I spent his other spells to kill the summoned creatures.
Some time later, all is dead.
With that done, we clear level 1 of WK w/o issues. Next was Trademeet. I generally fight Rakshasa in the grove since they have a very nice Amulet of Poison protection. And Belm (Ihtafeer wields it actually), but I'm in it for the amulet. I buff much, but Gares dissapears in Shadow Door - I should have known this would happen. Minsc, despite having worse saves, is still operational.
W/o Gares to tank, we take hefty damage. Cloudkills everywhere, Skull Traps, Telly Field. Aeire is the first to die.
I manage to survive until Gares shows up, Nalia now dies, but rakshasa already spent most of their spells. We start chewing through their mirrors/stoneskins.
I won the battle with no more casualties.
Jaheira won the duel for us -albeit dying in the first attempt.
Picked up Trademeet rewards, now is time for Umar dungeon. Took Mazzy in. I took the liberty of redistributing her pips - she looses Short Bow; gains Sling. I got really lucky with drops here.
Incredible...
I didn't want to fight Thax just yet, but Shade has to go. I didn't memorize Breach for this battle, which made it quite long lasting. Enough to become a problem. We killed Patrick first, then focused on altar - with IR, it doesn't pop with Sunstone bullets anymore. Shade was under PfMW, casting his crap - BBoD, FoD - Minsc ate it like a boss.
We had some rough moments - this is my protagonist's HP after a single crit.
Shade still bit the dust, however. This was a very badly played battle. I noticed the lack of Breach but tought that Pierce Magic + magic attacks would kill him; I was wrong and it could have ended really bad.
We're now heading to Graveyard after selling and buying some stuff in Alkathla, there's a funeral we need to go to.
Ok, Cavan is continuing his journey, fresh from the Siege of Dragonspear.
I'm using Enhanced Edition. Key mods include SCS (most tactical challenges, all AI); Ascension; Item Randomizer; and an assortment of tweaks that may make things slightly easier or harder. I also went for some content like Unfinished Business and Wheels of Prophecy. I wanted to add JimFix to add detail to the combat log, but couldn't find a valid download link.

I'm not sure how well all these ingredients will play with each other.... but I'm also not sure how long I'll survive to see any of the content, anyway. It's been a really long time since I've had BG2 up and running in any form... until this run, I've always failed in BG1. I tried Throne of Bhaal once after it came out and don't remember getting much beyond Illasera.
House rules: Core difficulty. I'll try to fight fair, but if the engine lets me do it, I can do it. (I've nerfed the worst cheese I know about, including the Shield of Balduran and the invisibility property of Staff of the Magi... and randomized the items anyway). I can skip any quest (except for the plot-critical ones). I can run away from any conflict. I am free to work with any NPC I choose, but also must aim to stick with Paladin-like behavior. Death => start again in BG1 at Candlekeep with a new random character. All new runs will include a fresh install of all mods to randomize things again, and must go through SoD. And of course... no reloads.
And with that: It is time for more... experiments ....
@Blind_Visionary: BG2 is definitely viable (albeit dicey) even if you haven't played it in a while. After all, we have blind SoD no-reloads in this thread, and SoD is similar in some ways to SCS BG2.
But I notice you have Ascension installed, and if you haven't played vanilla ToB more than once, I think trying out Ascension is very, very likely to result in death. I strongly recommend you either do some research on the Ascension mod, uninstall it before beginning ToB, or consider posting in the minimal reload thread if the run ends in ToB.
The fights in Ascension aren't necessarily the most difficult out of the saga--there are other challenging lower-level fights in the BG games--but Ascension is more than just a bonus layer of difficulty on top of SCS. Ascension also grants outrageous new powers and immunities to all kinds of ToB enemies, and the final battle with Melissan is an immensely complicated, high-pressure ordeal. It's a bit like the Tactics fight with Irenicus in Hell.

In short, Unseeing did him. I guess I should have postponed that battle but I wanted the shield from there. This cost Gares his life, however. Things kinda went bed from the start. Minsc died to unknown damage. I have no idea what happened; I'm sure it wasn't a Death Ray, yet he died. Other than that, the Anti-Magic Ray/Web/Cause wound bombardment proved too much.
I kinda tought I'll pull it through at one moment (Unseeing's PfMW expired) but then the worst possible thing happens - he succesfully charms Mazzy. First time he did that Aerie removed the effect, 2nd time she had no more Break Enchantment memorized. Mazzy's very accurate, and did serious damage to Gares.
As if that wasn't enough - Gares fails to save vs Hold. Aerie tried to cast invisibility on him, but gets pushed back by Telekinesis and that was it.
I'm probably gonna try a full MP party, but need to decide on protagonist class. I'd love to try shaman & Dragon Disciple. Carel Goth...mmm..I like. Or Garel Cloth.

Freya{26} - LoB sorcerer (update 1)
Going back to another long-running saga I'll try again to make good progress with a solo sorcerer in Legacy of Bhaal. I previously got through BG1 to confirm there were no great obstacles in doing that and will be aiming to get rather further in BG2 this time. A 26th run started pretty well, until I got a bit distracted playing with my toys. Freya was almost at her 9th and final level when I tried to kill the sirines at the lighthouse using skull traps, invisibility, web and minor spell deflection. That's not easy - primarily because the sirines move around so much and have pretty vicious poison arrows (thanks to the double damage of LoB). That movement proved costly when one of them successfully dodged a skull trap, which I then forgot about after a rest - and chalked up yet another suicide on my score!

And for the second half of my tale of woe here's the end of this promising combination. I was trying to smuggle a short session in between work commitments and possibly not fully focused as a result. Everything seemed to be going according to plan though as the session opened by defeating Tarnor's gang.
Then moving on to the illithid next door the first room was cleared without trouble. Toriac was using Arbane to defend against stun and the Shield of Harmony against charm, but he still had to retreat back along the corridor from the second room after feeling his brains being sucked slowly out through his nostrils. In theory that didn't seem like a problem as Ozzy had pre-summoned two skeleton warriors for just that eventuality and they should have provided a blocking force while Toriac recovered. Unfortunately one of those was slightly misplaced and didn't have a line of sight on the advancing illithids -so I had to try and manoeuvre it into position. That proved difficult in the confined quarters and the skeleton did a couple of multi-player lag teleport jumps - resulting in it actually pushing Ozzy forward into the front line where he was stunned. I paused the game at that point to get the skeleton into the position intended, but the illithid had already got a taste for bloodgrey matter and before Toriac could help out the run was over.
With a few minutes of time available we took the opportunity to start a new game. For the second time quite recently I ended up with a totemic druid, while Gate70's random selection was a fighter / mage - that combination should give plenty of options.
They quickly passed through Candlekeep before recruiting Xzar and Montaron to rob their items. Gate70 found he wasn't able to get into Xzar's inventory screen - oh well, there's more than one way to skin a cat!
Janus cast entangle to try and freeze Shoal in place, before Gryph showed him how it should be done by blinding her for easy disposal.
Tough breaks, Aasim, Grond0 and Gate70. Although to me @Grond0 , it always seems you under-estimate the illithids. I take a very serious approach to them (gobs of genius potions, fool-proof stun protection, extremely high AC, etc.). The only fool proof summon I have found is a planetar protected by chaotic commands - summons never seem to get to the job done for me, so thus I rely on massive defense on my own character instead.

Ahem... right... started Siege of Dragonspear (after a lengthy but uneventful slaying of Sarevok). Will post adventure later. Playing blind, for the first time, at "Insane" (without damage bonus).
So far, I am very much impressed with SoD: opening dungeon was one of the best in the BG series. (... which I am proud to say I rocked: an invisible scout (Safana) + carpet bombing every encounter makes the difficulty level mostly irrelevant.)
Congrats, @Ygramul! I'm glad that your 80 hours of preparation paid off and that you survived the temple unscathed!

I gotta say that I followed the advice given after my last death: INVISIBILITY POTIONS!
They prevented at least four deaths. (Resulting in Minsc and Jaheira drinking Healing Potions like there is no tomorrow.) And managed confuse Sarevok waiting in a corner for a few precious rounds.
Also, I noticed that I can have Minsc drink a Potion of Genius to use Scroll of Prot Magic! As a result he tanked a lot of nasty spells.
Still, Imoen and Jaheira died. (As a tactical choice, I had ignored the Skeletal Warriors. They hit hard!)
Once Sarevok is alone, I unloaded wand after wand (Frost, mostly) at him till he fell, while using up the precious few charges of the Summoning wand.
Unusually for me I've got almost no work or family commitments today. Not unusually for me I can't sleep either, so decided this would be a good opportunity to have another go at my one-day challenge https://forums.beamdog.com/discussion/60888/ascension-in-a-day#latest I've lost the original installation for that (on a previous computer), so have just spent a bit of time recreating that and rerolling the character (dwarven fighter/thief named Alac). It's now just after 2.00 am my time, so let's see how long I can both maintain concentration and not nod off
Thanks Blind_Visionary. Alac has completed the first stage of his journey and arrived in Jon's dungeon with 2 hours 6 minutes on the clock. That's pretty much in line with my target, particularly given slight delays for 2 crashes and the need to sit through all the cutscenes (as this is the first time I've played the game with this installation)
The clock's still running, but I will take a short break for a drink now before buckling down to it again ...
Drat. A moment's inattention proved costly in the Planar Prison. I had used Vhailor's Helm for the first time to produce a simmy, but was looking at my next move rather than concentrating on the current action and didn't notice it being killed - that meant Alac was held by a death gaze before I realised he was being attacked ...
On the plus side it's still well before breakfast time, so there's plenty of opportunity to have another go today
Groan. I had killed Sarevok and virtually finished BG1 - would have been about 1 hour 40 to arrive in Jon's dungeon this time - and was just picking up the last tome from Durlag's Tower. In my haste to finish I tried to disarm the trap guarding the tome - forgetting that one can't be disarmed (at least in BGT). I still think I was pretty unlucky there though - first with my find traps score of 100 setting the trap off rather than just not disarming it and then actually getting charmed with a save vs spell of 1.
It is now just about breakfast time so I'll have a little break for that and then have one final go - perhaps trying to moderate speed with a bit more caution ...
I remembered to use a potion of magic blocking against the trap in Durlag's Tower and have arrived back in Jon's dungeon. That took 1 hour 45 mins, so just marginally slower than the second run. I do feel pretty tired already though and there's a long way to go ...

To put it succinctly, in a no-reload context, if you are worried about a particular spell being cast on your PC from a divine caster NPC that might end your run, protect your PC with whatever tactics/equipment/buffs that will insure your run continues - DON'T rely on interrupting the NPC's spells, because eventually your luck will run out as Thalantyr says.
It's one of those "Today I learned..." moments -- after playing this thing since the original 5 disc set.

P.S. Long after leaving Durlag's Tower behind *without* doing the last fight with the Demon Knight, I went back to that save just to see how hard it would have been. ("Off-the-record", as it were.) Summary: my buffed F/M beat him to death after having him waste some nasty spells on summons and a Minsc (Power Word: Stun stunned Minsc despite the Free Action Sword?! What the Hell?). BUT he managed to kill Neera (an inconvenience) and *destroy* Viconia (a disaster!) with a Fireball.
Q.: Given that I have both "NPCs do not die permanently" turned ON and Gore turned OFF, how would Viconia get destroyed? (I don't think it was anything like petrification.)
So, anyway, he is actually beatable in melee -- IF I had fought him for real.
But I wanna checkout Viconia in SoD, so I am glad I didn't risk this in hindsight.
In my next run, I may have a melee charname solo him with a Scroll of Magic Protection....

Lots of things done today, including picking up a fever of sorts. On the bright side, if it doesn't go too high I'll have more time to play.
Anyhow, witnessed some strange EE stuff. For one, we met some "brigands" en route to Nalia's keep. This is in vanilla a ch.6 (after Bodhi is killed anyway) encounter I think?
I ran away.
Keep was fairly straightforward. I fought Torgal, his Umber pet and two mages all together. Buffed Gares with Pro Cold and had Jaheira smack Ice Storm on top of it all. Unfortunately, both mages had GoI - completely avoiding the effects.
This lasted a while. A *long* while. I hate trolls. The buggiest creatures ever to exist. Torgal just wouldn't go down, yuan-ti's summoned and summoned, and then summoned some more. My protagonist isn't protected from critical hits, and number of oponents got big really quickly, leading to him taking damage.
Aerie gets chased by Wraiths, slowed, dies.
Finally, after what seemed an eternity, Torgal is dead. Notice the yuan-ti at bottom left - Nalia dominated him.
Nice! He's got Disintegrate! And hasn't used it yet! I have him cast it on his pal - but his MR stops it. I spent his other spells to kill the summoned creatures.
Some time later, all is dead.
With that done, we clear level 1 of WK w/o issues. Next was Trademeet. I generally fight Rakshasa in the grove since they have a very nice Amulet of Poison protection. And Belm (Ihtafeer wields it actually), but I'm in it for the amulet. I buff much, but Gares dissapears in Shadow Door - I should have known this would happen. Minsc, despite having worse saves, is still operational.
W/o Gares to tank, we take hefty damage. Cloudkills everywhere, Skull Traps, Telly Field. Aeire is the first to die.
I manage to survive until Gares shows up, Nalia now dies, but rakshasa already spent most of their spells. We start chewing through their mirrors/stoneskins.
I won the battle with no more casualties.
Jaheira won the duel for us -albeit dying in the first attempt.
Picked up Trademeet rewards, now is time for Umar dungeon. Took Mazzy in. I took the liberty of redistributing her pips - she looses Short Bow; gains Sling.
I got really lucky with drops here.

I didn't want to fight Thax just yet, but Shade has to go. I didn't memorize Breach for this battle, which made it quite long lasting. Enough to become a problem. We killed Patrick first, then focused on altar - with IR, it doesn't pop with Sunstone bullets anymore. Shade was under PfMW, casting his crap - BBoD, FoD - Minsc ate it like a boss.
We had some rough moments - this is my protagonist's HP after a single crit.
Shade still bit the dust, however. This was a very badly played battle. I noticed the lack of Breach but tought that Pierce Magic + magic attacks would kill him; I was wrong and it could have ended really bad.
We're now heading to Graveyard after selling and buying some stuff in Alkathla, there's a funeral we need to go to.
I'm using Enhanced Edition. Key mods include SCS (most tactical challenges, all AI); Ascension; Item Randomizer; and an assortment of tweaks that may make things slightly easier or harder. I also went for some content like Unfinished Business and Wheels of Prophecy. I wanted to add JimFix to add detail to the combat log, but couldn't find a valid download link.

I'm not sure how well all these ingredients will play with each other.... but I'm also not sure how long I'll survive to see any of the content, anyway. It's been a really long time since I've had BG2 up and running in any form... until this run, I've always failed in BG1. I tried Throne of Bhaal once after it came out and don't remember getting much beyond Illasera.
House rules: Core difficulty. I'll try to fight fair, but if the engine lets me do it, I can do it. (I've nerfed the worst cheese I know about, including the Shield of Balduran and the invisibility property of Staff of the Magi... and randomized the items anyway). I can skip any quest (except for the plot-critical ones). I can run away from any conflict. I am free to work with any NPC I choose, but also must aim to stick with Paladin-like behavior. Death => start again in BG1 at Candlekeep with a new random character. All new runs will include a fresh install of all mods to randomize things again, and must go through SoD. And of course... no reloads.
And with that: It is time for more... experiments ....
But I notice you have Ascension installed, and if you haven't played vanilla ToB more than once, I think trying out Ascension is very, very likely to result in death. I strongly recommend you either do some research on the Ascension mod, uninstall it before beginning ToB, or consider posting in the minimal reload thread if the run ends in ToB.
The fights in Ascension aren't necessarily the most difficult out of the saga--there are other challenging lower-level fights in the BG games--but Ascension is more than just a bonus layer of difficulty on top of SCS. Ascension also grants outrageous new powers and immunities to all kinds of ToB enemies, and the final battle with Melissan is an immensely complicated, high-pressure ordeal. It's a bit like the Tactics fight with Irenicus in Hell.
In short, Unseeing did him. I guess I should have postponed that battle but I wanted the shield from there. This cost Gares his life, however.
Things kinda went bed from the start. Minsc died to unknown damage. I have no idea what happened; I'm sure it wasn't a Death Ray, yet he died.
Other than that, the Anti-Magic Ray/Web/Cause wound bombardment proved too much.
I kinda tought I'll pull it through at one moment (Unseeing's PfMW expired) but then the worst possible thing happens - he succesfully charms Mazzy. First time he did that Aerie removed the effect, 2nd time she had no more Break Enchantment memorized. Mazzy's very accurate, and did serious damage to Gares.
As if that wasn't enough - Gares fails to save vs Hold. Aerie tried to cast invisibility on him, but gets pushed back by Telekinesis and that was it.

Going back to another long-running saga I'll try again to make good progress with a solo sorcerer in Legacy of Bhaal. I previously got through BG1 to confirm there were no great obstacles in doing that and will be aiming to get rather further in BG2 this time. A 26th run started pretty well, until I got a bit distracted playing with my toys. Freya was almost at her 9th and final level when I tried to kill the sirines at the lighthouse using skull traps, invisibility, web and minor spell deflection. That's not easy - primarily because the sirines move around so much and have pretty vicious poison arrows (thanks to the double damage of LoB). That movement proved costly when one of them successfully dodged a skull trap, which I then forgot about after a rest - and chalked up yet another suicide on my score!

And for the second half of my tale of woe here's the end of this promising combination. I was trying to smuggle a short session in between work commitments and possibly not fully focused as a result. Everything seemed to be going according to plan though as the session opened by defeating Tarnor's gang.
Then moving on to the illithid next door the first room was cleared without trouble. Toriac was using Arbane to defend against stun and the Shield of Harmony against charm, but he still had to retreat back along the corridor from the second room after feeling his brains being sucked slowly out through his nostrils. In theory that didn't seem like a problem as Ozzy had pre-summoned two skeleton warriors for just that eventuality and they should have provided a blocking force while Toriac recovered. Unfortunately one of those was slightly misplaced and didn't have a line of sight on the advancing illithids -so I had to try and manoeuvre it into position. That proved difficult in the confined quarters and the skeleton did a couple of multi-player lag teleport jumps - resulting in it actually pushing Ozzy forward into the front line where he was stunned.
I paused the game at that point to get the skeleton into the position intended, but the illithid had already got a taste for

With a few minutes of time available we took the opportunity to start a new game. For the second time quite recently I ended up with a totemic druid, while Gate70's random selection was a fighter / mage - that combination should give plenty of options.
They quickly passed through Candlekeep before recruiting Xzar and Montaron to rob their items. Gate70 found he wasn't able to get into Xzar's inventory screen - oh well, there's more than one way to skin a cat!
Janus cast entangle to try and freeze Shoal in place, before Gryph showed him how it should be done by blinding her for easy disposal.

Gryph, fighter 1 / mage 1, 10 HPs, 7 kills, 0 deaths
Looks like I'll be following in the footsteps of many a talented Charname, based on this morning's action...

started Siege of Dragonspear (after a lengthy but uneventful slaying of Sarevok). Will post adventure later. Playing blind, for the first time, at "Insane" (without damage bonus).
So far, I am very much impressed with SoD: opening dungeon was one of the best in the BG series. (... which I am proud to say I rocked: an invisible scout (Safana) + carpet bombing every encounter makes the difficulty level mostly irrelevant.)
Hope the rest of this expansion holds this well.

They prevented at least four deaths. (Resulting in Minsc and Jaheira drinking Healing Potions like there is no tomorrow.) And managed confuse Sarevok waiting in a corner for a few precious rounds.
Also, I noticed that I can have Minsc drink a Potion of Genius to use Scroll of Prot Magic! As a result he tanked a lot of nasty spells.
Still, Imoen and Jaheira died. (As a tactical choice, I had ignored the Skeletal Warriors. They hit hard!)
Once Sarevok is alone, I unloaded wand after wand (Frost, mostly) at him till he fell, while using up the precious few charges of the Summoning wand.

I've lost the original installation for that (on a previous computer), so have just spent a bit of time recreating that and rerolling the character (dwarven fighter/thief named Alac). It's now just after 2.00 am my time, so let's see how long I can both maintain concentration and not nod off

On the plus side it's still well before breakfast time, so there's plenty of opportunity to have another go today

I remembered to use a potion of magic blocking against the trap in Durlag's Tower and have arrived back in Jon's dungeon. That took 1 hour 45 mins, so just marginally slower than the second run. I do feel pretty tired already though and there's a long way to go ...
