You cannot kill Volo. I mean seriously you can swing all you like at him, you can check his character file to see if he is wearing anything that preserves his existence, you can even ctrl+Y him. It doesn't matter. Volo lives. I'm assuming it has something to do with him not having any death animation but either way it sure is interesting
All main villains (Sarevok, Irenicus, Melissan) like people/you to suffer. Sarevok maybe the least, but it is in some dialogues in hell, maybe in bg1 Irenicus: "you will suffer, you will all suffer" Melissan: "You shall suffer"
I mean it as in voiced lines, bcs its just awesome. And maybe someone mentioned this already, if so, credit goes to him/her.
Did you know that if you talk to lady Oriana in the government district with both Valgyr and Viconia in your party they will fight to the death? Viconia insults Valgyr's sexuality and demands that he proves himself a man who can handle a woman. He responds by killing her. Which was hilarious to watch.
Even if I wanted to help Viconia...which I really didn't as she really brought it on herself, there wasn't much I could do. He chunked her way too fast...
"So hard to find decent folk nowadays..." that many of you might recognize as being Firebead's greeting line was actually originally intended to be used by a Farmer Wilton. Farmer Wilton however was cut from the game (though if you install Unfinished Business he is restored).
Did you know that when talking to the pirate lord to get into spellhold, if you screw it up Yoshimo gets you in instead? I had no idea until last night!

There were plans to make not only weapons to break, but also armors, shields and other miscellaneous items. It is a bit strange that the iron crisis is affecting weapons only. Having other parts of equipment with ability to break would make the game a bit harder, or frustrating. So, no wonder it was cut, though it would be interesting to play with that implemented. There are still "broken" items in the game.
Broken armor, using the same icon as the ancient armor -> Broken shield -> Broken item, I wonder what types of items would break apart from weapons, armors and shields. Maybe rings? ->

This is a option in a mod I'm using I can't remember which, think it's BG2tweaks or SCS, Khalid Plate did break once, also somebodies chain mail.
The description for an Archer's Called Shot ability implies that the effects of Called Shot change based on level, from a THAC0 penalty (20 seconds) to a save penalty (15 seconds) to a Strength penalty (10 seconds) to 2 damage. In reality, they stack: at level 16, all four effects apply at once. The same does not apply for a Bounty Hunter's Special Snares: at level 21, they only Maze the targets; the snares have no other effect.
Cast Improved Haste on a 13th-level Archer with the Tuigan Bow or a few darts, and the Archer can inflict up to a -20 penalty to a target's save vs. spell and STR. Cast Ray of Enfeeblement and it's a guaranteed failed save on ANY target, for a guaranteed kill.
I don't how it's in EE, but in the original Baldur's Gate some bears won't change focus to other party members until the first one they noticed is dead. The one in the cave above Xvart viallage for sure and similarly Ursa won't attack you unless Nexlit is killed. Maybe Xvarts cause bears to be so mean that they will try to kill their target no matter what.
